Sweet & Sour Zucchini Salad

HAPPY LABOR DAY WEEKEND!!!
I am not sure why its so happy though...it kind of means summer is over and I dont feel like I even got to enjoy it yet.

I made the Tri-color Orzo Salad again and so I am posting another picture of it. I made the full batch and this time I used Ricotta Salata Cheese. Have to say I think I like Feta Better. Its cheaper, its already crumbled, and I think I like the taste better. Not that this is bad, I have eaten a ton of it already today but don't feel like you are missing out by substituting. Now for another side dish
I had this very yummy salad at a going away Party for Doug's Cousin Ross. He quit his job as an attorney and has traveled to South Africa to do volunteer work. It looks like an amazing opportunity and I read his blog every night to make sure he posts, so we know he is OK. I am sure I am not alone. His mom made this salad and then when I raved about it she sent me the recipe. I am sure once the rest of the family knows I have it, they will be asking me for it too. So I am going to post it here for them....and for you of course
Sweet & Sour Zucchini Salad

1/8 cup red wine vinegar
2/3 cup white vinegar
1/3 cup oil
¾ cup sugar
½ tsp. pepper
1 tsp. salt

1 minced onion
½ cup chopped pepper (green or red)
½ cup chopped celery
5 sliced zucchini

Prepare marinade by mixing together first 6 ingredients
Pour over Zucchini, Onions, Pepper, & Celery
Let stand 6 hours or overnight **** Warning you need to make this recipe ahead of time****
Drain and Serve



Yes its that simple and can I tell you I could easily eat this entire bowl myself. I am sure I would be sick as can be but, once you start eating it you cant stop. We are having friends over for dinner and I have been snacking on it since I woke up this morning. There wont be any left. It is so easy to do BUT WAIT….its only easy if you have the right chopper or mandoline. You need really thin uniform slices. I have the cheapest plastic mandoline slicer that I got from Target a few years ago. I think I paid $12 for it (maybe even less) I use it for my Gratin Potatoes and now this recipe. But its worth it. Took me all of 3 minutes to slice the Zucchini. If you don’t have one I would go run out and get one and then stop and get the ingredients you need for this salad so you can have it in 6 hours or tomorrow. Its addicting and I can see bringing this to BBQ’s and people being very happy I did. I just wish I didn't have to think ahead at least 6 hours to make it, I fear I wont be able to remember to make this salad again
