Meatloaf Muffins

Not much to say about these little beauties. I have been making this recipe a long time and I love it. I love stove top stuffing. I can eat it right out of the pot. So naturally mix it into anything and I love that too. I like the whole meatloaf muffin concept because they are cuter then a slab of meatloaf on the plate. I can see mixing some mashed potatoes with food coloring and frosting these bad boys for the kids. What kid wouldn't eat a muffin with potato frosting?
Meatloaf Muffins

Ingredients
1lb of lean ground beef I use 93% lean
1 box stove top stuffing mix
2 eggs
1 cup water
¼ cup ketchup
Salt & Pepper to taste—I don’t add salt because I feel like the stuffing is salty enough
Additional Ketchup or BBQ Sauce for the tops

Directions
Mix Water and Stuffing in a large bowl
Add the remaining ingredients and mix until combined
Spoon into a greased 12 muffin pan
Squirt ketchup or BBQ sauce on the tops
Bake in pre-heated over for 30-35 minutes at 350 degrees

  2. I made these tonight and they were delicious (and super cute)! Next time I might try making them with ground turkey and maybe add some craisins for a Thanksgiving muffin.

  4. Just had another idea. I might use a box of the corn bread stove top instead of regular. Now I'm actually hungry for thanksgiving dinner.

  5. You are the meatloaf muffin expert!! I actually have another good one that is a bit more labor intensive and time consuming with hidden veggies in it. I like this one because its faster, but I will let you know when I get to the other one again. Let me know how the experimenting goes
